Beef Shawarma with Grenache

Ingredients

  • 1 kg flank steak or skirt steak
  • Juice of 2-3 limes
  • 4 cloves garlic, minced
  • 1/4 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Fresh coriander, chopped (for garnish)
  • Salsa, guacamole, and tortillas (for serving)

Method

  1. In a bowl, whisk together lime juice, minced garlic, orange juice, soy sauce, olive oil, cumin, chili powder, salt, and pepper to make the marinade.
  2. Place the steak in a shallow dish or resealable plastic bag and pour the marinade over the steak. Marinate in the refrigerator for at least 2 hours or overnight.
  3. Preheat grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill or cook the steak for about 6-8 minutes per side (depending on thickness) until desired doneness.
  4. Let the steak rest for a few minutes before slicing thinly against the grain. Serve hot with fresh coriander, salsa, guacamole, and warm tortillas.
