Cheesy Broccoli Chicken Bake

Ingredients

  • 4 Skinless chicken breasts
  • Salt and pepper, to taste
  • 2 cups broccoli florets, blanched
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

For the sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste

Method

  1. Preheat the Oven: Preheat your oven to 190°C. Lightly grease a baking dish (approximately 23 x 34 centimetres).
  2. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Quickly pan fry in olive oil to brown on both sides (does not have to be cooked all the way through). Slice and place pieces in the prepared baking dish.
  3. Blanch the Broccoli: Bring a pot of water to a boil and blanch the broccoli florets for about 2 minutes. Drain and set aside.
  4. Make the Sauce: In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute to make a roux. Gradually whisk in milk and chicken broth. Stir in garlic powder, onion powder, dried thyme, salt, and pepper. Cook, stirring constantly, until the sauce thickens, about 3-5 minutes.
  5. Assemble the Bake: Scatter blanched broccoli florets evenly over the chicken pieces in the baking dish. Pour the sauce over the chicken and broccoli, making sure everything is well coated.
  6. Add Cheese: Sprinkle shredded cheddar cheese evenly over the top of the chicken and broccoli. Then, sprinkle grated Parmesan cheese over the cheddar.
  7. Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and continue baking for an additional 5-10 minutes, or until the chicken is cooked through (internal temperature of 75°C) and the cheese is bubbly and golden brown.
  8. Serve: Remove from the oven and let it rest for a few minutes before serving. Garnish with chopped parsley if desired. Serve this cheesy broccoli chicken bake hot, with rice, pasta, or crusty bread on the side.
