What’s not to love about taco Tuesday? Throw away the Old  El Paso taco kit, grab the ingredients yourself and you will be making these from scratch in no time!

Ingredients

  • 1 porterhouse steak
  • 2 skin off chicken thigh
  • 3 tbsp smoke paprika
  • 2 garlic cloves
  • 1 tbsp ground cumin
  • 1 tbsp onion powder
  • salt and fresh ground pepper
  • 2 fresh limes
  • 2 avocado
  • 1 white onion
  • 1 bunch coriander
  • 1 punnet cherry tomato
  • 1 Lebanese cucumber
  • 100g Danish feta
  • 1 pkt La Banderita flour tortillas
  • ½ tsp dried oregano

Method

For the marinade

In a bowl mix smoke paprika,  ground cumin, salt and fresh ground pepper and crushed garlic, mix in some olive oil and you steak and chicken, and marinate in the fridge while you prep everything else

 

For the salsa

  1. Smash avocado in a bowl, add dried oregano, add juice of half a lime and salt and pepper to taste
  2. Finely dice onion and roughly chop the leafy coriander and mix
  3. Dice cucumber, chop cherry tomato into quarters, add some diced onion and finely chop the coriander stalks add juice of half a lime salt and pepper to taste
  4. Crumble feta (If you can get Queso Fresco get it but don’t stress it)

 

For the meat

I like to cook the thigh in the air fryer for about 15 – 20 minutes. Once cooked cut into strips and season to taste.

In a hot pan add steak and cook for about 4 minutes on each side depending on the thickness you’re looking for medium done. Remove from pan and allow to rest for 5 minutes. Once rested cut into small chunks and season to taste

 

For the tortillas

You can cook the tortillas in a dry frying pan or if you are brave and have gas hobs you can cook directly over the flame to get a slight char.
